Blueberries
are Full of Antioxidants and Vitamins. They aid digestion and UT Health, slow
the breakdown of bones, lower Heart Disease Risk, reduce Belly Fat, improve
vision, prevent cancer and enhance mood. So it is fun and healthy to add them to
my favorite pancakes. Try and Enjoy ;)
Ingredients
·
1 cup
all purpose flour
·
2 tbsp white granulated sugar
·
½ tsp
salt
·
1 tsp baking powder
·
1 tsp baking soda
·
½ tsp vanilla syrup
·
zest
of half a lemon
·
1
whole egg
·
1 cup milk
·
3 tbsp melted butter
·
3/4 cup blueberries
Directions
1-
In a large bowl, sift together the flour, the sugar, the salt, the baking powder, the
baking soda, the vanilla syrup and finally the lemon zest and mix them.
2-
Make a well in the center and pour
in the milk, egg and melted butter; mix until smooth.
3-
Add the blueberries when the mix
is smooth.
4-
Set a small
frying pan over a medium heat and carefully wipe it with some oil (I prefer to
use coconut oil). When hot, cook your pancakes for 1 min on each side until
golden.
5-
Finally put
your pancakes on a plate and add some maple syrup and a small cube of butter.
