Simple Fried Rice Recipe

Carrots are anti-bacterial, anti-cancer and great for eye health. They improve the skin, digestion, kidney function and liver function. They also reduce incidence of stroke, maintain a healthy heart and promote healthy teeth.

White Onion is antiseptic, anti-spasmodic and anti-biotic. It assists with asthma, detoxifying of metals and parasites, prevents cancer, protects brain, strengthens bones, aids digestion and purifies Blood.

Sugar Snap Peas are full of fiber and of vitamin B, C and K. they are Anti-Oxidant, Anti-Inflammatory, good iron source and healthy bones. They boost Energy and assist weigh management.

Ingredients:
  • 3 tbsp olive oil
  • 2 eggs
  • 2 medium peeled and diced carrots
  • 1 small diced white onion
  • ½ cup diced celery
  • ½  cup frozen sugar snap peas
  • ½ cup frozen corn
  • 3 cloves minced garlic
  • 2 cups of rice
  • 1 tbsp of ginger paste
  • 2 ½ cups of water
  • 3 thinly sliced spring onions
  • 2 tbsp soy sauce
  • Salt and pepper to taste

Directions:

1-      Heat 1tbsp the olive oil in a large skillet over medium-high heat.  Add the eggs, and cook until scrambled, stirring occasionally. Remove egg, and transfer to a separate plate.

2-      Add an additional tbsp of olive oil to the pan and heat. Add carrots, onion, Sugar Snap Peas, corn, celery and garlic, and season with a generous pinch of salt and pepper. SautĂ© for about 5 minutes or until the onion and carrots are soft.

3-      Increase heat to high, add in the remaining 1 ½ tbsp of olive oil, and stir.

4-       Immediately add the rice, spring onions, soy sauce, ginger paste and stir until combined.

5-      Continue stirring for an additional 3 minutes to fry the rice. Then add the water and let it boil.

6-      When the water is absorbed, lower the heat and add the eggs and stir to combine.

7-      Serve warm and enjoy
