Basil, Rocket and Lemon Penne

Serves: 2
Preparation time: 10 minutes
Cooking time: 10 minutes


-       200 g dried penne
-       1 tbsp olive oil
-       ½ tbsp lemon zest
-       1 lemon
-       ¼ cup of basil leaves
-       ½ cup of wild rocket leaves
-       2 tbsp of freshly grated parmesan cheese
-       Salt and pepper to taste


1.     Cook the pasta in a large saucepan of salted boiling water until al dente, about 9 minutes, then drains.
2.     Return the pasta to the pan and place over a low heat.
3.     Add all the remaining of the ingredients, season with salt and pepper and stir until the pasta is evenly coated.

4.     Serve immediately!
